Fresh Summer Eating

This is my signature dish.  Dinner parties, potlucks, home alone, whatever.  It's so simple and packs a huge flavor punch.

I used tilapia but feel free to use any flaky white fish; monkfish works great too.

In a pan, lay out one bunch of slim asparagus.  In a bowl mix together:

  • 1 can of white beans
  • 3 chopped scallions
  • Half a red onion, finely chopped
  • 1 tub of halved grape tomatoes
  • 2 handfuls of kalamata olives, chopped
  • 4 whole smashed garlic cloves

Season with salt and pepper, olive oil and the juice of one lemon and ladle it over the asparagus.  Place 3 seasoned filets of fish over the top and cook at 370F for 15-20 minutes.

When it's done, sprinkle with some chopped cilantro, pair with a chilled glass of Chardonnay and enjoy the 2 minutes it takes for you to gobble it up.
